UI and Rom setup I believe is the main draw. Batocera has a dope UI (and modifiable UIs) and importing roms is super simple. Emudeck is limited to either Emulation Station or SteamDeck UI, and you need to import your games with Steam Rom Manager if you plan on using the SteamUI. Could also be a way to separate your Modern Games vs your Emulators.
